Scorpion Egg Salad

Sometimes you just have too many eggs in the house and barely anything else.

That’s when you turn to egg salads to get you through the day (while saving your budget). Of course, that’s only because you haven’t try this super hot egg salad. Once you have, you’ll crave it all the time.

The recipe serves two to four people (depending on hunger levels) and it’s one of those recipes you should always have on hand.

6 each Eggs
up to 1 teaspoon Mad Dog 357 Scorpion Hot Sauce
3 tablespoons Mayonnaise
1 tablespoon Mustard
1 teaspoon Dried dill
1 teaspoon Lemon juice
1 stalk Celery, chopped
2 each Dill pickles, chopped
1 pinch Cayenne pepper
Salt and pepper, to taste

Bring a medium pot of water to a boil. Add the eggs (in their shells) and hard boil for 10 minutes. Turn off the heat and remove eggs to a bowl and run under cold water for a few seconds to stop the cooking. Peel and roughly chop eggs. Place into a small mixing bowl. Add the Mad Dog 357 Scorpion Hot Sauce and the remaining ingredients and stir. Serve with crackers or on toast for a scorching hot sandwich.
