Serves: 6
You’ll need:
For the chicken tikka
2 tbsp. butter (ghee if you can get it)
1 minced onion
4 cloves minced garlic
1 tbsp. cumin
2 tsp paprika
1 tsp each: salt, ground ginger
½ tsp cinnamon, turmeric, curry powder
1-2 teaspoons Mad Dog 357 Pure Ghost Hot Sauce
1 can (14 oz.) tomato sauce
1 cup heavy whipping cream
1 tbsp. vegetable oil
4 chicken breasts, cut into bite-size pieces

For the sandwich
2 each: sliced green bell peppers green onions
2 c shredded mozzarella
6 long sub rolls, split open
oven preheated to 350°F

Preparation

Heat the butter in a large skillet over medium heat. Add the onion and cook for 5 minutes, until translucent. Add the garlic and cook for another minute. Add the spices and cook, stirring continuously, for 2 more minutes. Pour in the Mad Dog 357 Pure Ghost Hot Sauce and the tomato sauce and reduce the heat to low. Cook for 10 minutes, stirring occasionally. Pour in the cream, bring the heat back up to medium, allowing the mixture to simmer. Cook for 10-15 minutes until thickened.

Meanwhile, in a separate skillet, heat the oil over medium. Add the chicken breast and cook for 3-4 minutes, stirring regularly, until lightly browned. When the tikka sauce has thickened, add the chicken pieces (and any remaining pan juices) to the skillet and simmer for another 30 minutes. (Or, until the chicken is cooked and you can't wait another minute).

When the tikka is ready, scoop spoonful's into the rolls, top with veggies and cheese and place on a baking sheet. Bake in the preheated oven for 6-8 minutes until the cheese is melty and perfect.
