It’s a little difficult to believe there was once a time when hot sauces weren’t on everyone’s lips. We mean that literally; you know – as they drool and sweat through the glorious pain that comes with capsaicin. And, we also mean that figuratively – as in the fact that people can’t stop talking about super hot sauces. This isn’t just an American thing either. There are people that can’t go without a drop or two of hot sauce on their eggs. They’ll use whatever is on the table. It doesn’t need to be that hot as long as the peppery, vinegary flavor works itself to the fore. Then there are those that call themselves chili heads. These are the people that scoff at whatever bottle of hot sauce happens to be on the table. No, that’s not completely accurate. It’s that they would need to use the entire bottle of that 4000 Scoville hot sauce to make some sort of a difference to their day.

We’ve heard for a long time that hot sauce sales are on the rise in the United States. And, it wouldn’t take a lot of effort to see it, let alone believe it. Hot sauces are everywhere. It seems like every time you head to the grocery store, there’s a new one on the shelves. (Don’t worry, we’re not threatened.
