๐Ÿ“ Ingredients:

  • ๐Ÿฅฉ 3 lbs beef chuck roast or short ribs

  • ๐ŸŒถ๏ธ 4 dried guajillo chiles

  • ๐ŸŒถ๏ธ 2 dried ancho chiles

  • ๐Ÿง„ 4 garlic cloves

  • ๐Ÿง… 1 white onion (halved)

  • ๐Ÿ… 2 Roma tomatoes

  • ๐Ÿฅ„ 2 tsp ground cumin

  • ๐Ÿฅ„ 1 tsp dried oregano

  • ๐Ÿง‚ Salt & pepper to taste

  • ๐Ÿƒ 2 bay leaves

  • ๐Ÿ— 4 cups beef broth

  • ๐ŸŒถ๏ธ๐Ÿ”ฅ 1/2 tsp Mad Dog 357 Scorpion Hot Sauce (โš ๏ธ Super spicy! Use carefully!)

  • ๐ŸŒฎ Corn tortillas (for serving)

  • ๐Ÿง€ Shredded Oaxaca cheese (optional)

  • ๐ŸŒฟ Fresh cilantro & chopped onions (for garnish)

  • ๐Ÿ‹ Lime wedges (for serving)


๐Ÿ‘จ๐Ÿณ Instructions:

  1. Prep the Chiles
    ๐Ÿ”ฅ Remove stems & seeds from dried guajillo and ancho chiles.
    ๐Ÿณ Toast them lightly on a skillet (30 seconds per side) until fragrant.
    ๐Ÿ’ฆ Soak in hot water for 15 minutes until soft.

  2. Make the Sauce
    ๐Ÿง„ Blend softened chiles, garlic, tomatoes, cumin, oregano, half the onion, and 1 cup broth until smooth.

  3. Sear the Meat

    ๐Ÿ•ฐ๏ธ Simmer on low heat for 3โ€“4 hours (or in a slow cooker for 6โ€“8 hours) until beef is fall-apart tender.
    ๐Ÿด Shred the beef once cooked.

  5. Serve It Up!
    ๐ŸŒฎ Dip tortillas in the red broth, fry lightly, fill with beef and cheese, and fold into tacos.
