1 whole beef brisket, 8–10 lb

Super Hot Ghost Pepper BBQ Sauce

1 1/2 cups BBQ sauce

2 tablespoons apple cider vinegar
-
2 tablespoons brown sugar or honey

1 tablespoon Worcestershire sauce

1 tablespoon butter

1/4 teaspoon Mad Dog 357 Ghost Pepper Hot Sauce, for hot

1/2 teaspoon Mad Dog 357 Ghost Pepper Hot Sauce, for super hot

1 teaspoon Mad Dog 357 Ghost Pepper Hot Sauce, for extreme heat
Instructions

Trim the brisket.
Trim excess fat, leaving about 1/4 inch of fat on the brisket to help keep it moist while cooking. -
Season the beef.
Rub the brisket with yellow mustard. Mix the salt, black pepper, smoked paprika, garlic powder, onion powder, chili powder, and cayenne. Coat the brisket evenly on all sides. -
Cook low and slow.
Smoke the brisket at 225°F–250°F until the internal temperature reaches about 165°F. This usually takes 6–8 hours depending on the size of the brisket. -
Wrap and finish cooking.
Wrap the brisket in butcher paper or foil and continue cooking until the internal temperature reaches 200°F–205°F and the meat feels tender when probed. -
Rest the brisket.
Let the brisket rest for at least 1 hour before slicing. This keeps the beef juicy and tender. -
Make the Ghost Pepper BBQ sauce.
In a small saucepan, combine BBQ sauce, apple cider vinegar, brown sugar or honey, Worcestershire sauce, butter, and Mad Dog 357 Ghost Pepper Hot Sauce. Simmer for 5–7 minutes, stirring often. -
Glaze the brisket.
Brush the sliced brisket with the super hot BBQ sauce or serve the sauce on the side for dipping. -
Serve.
Serve with cornbread, coleslaw, pickles, mac and cheese, or roasted potatoes.
Heat Warning
Mad Dog 357 Ghost Pepper Hot Sauce is extremely hot. Start small, taste the sauce, and add more only if you want serious heat. For most people, 1/4 teaspoon in the full batch of BBQ sauce is plenty. For true heat seekers, increase carefully.
