M is for Mad Dog. C is for capers and cauliflower.
It’s all good stuff, no matter what you call it. This is one of the best veggie dishes for you to set on the Christmas table; it will be gobbled like there’s no tomorrow. Really it’s that good. This dish serves about four as a side, but we recommend doubling it for six people because it just never seems to go far enough. And, feel free to indulge in the wine left in the bottle.

Ingredients
1 head Cauliflower
5 tablespoons Olive oil
Kosher salt and freshly ground pepper
1 teaspoon Mad Dog 357 Original Hot Sauce
2 tablespoons capers
¼ cup White wine
2 tablespoons butter, cold
Preparation
Preheat the oven to 400ºF. Core the cauliflower and cut into florets and place them on a baking sheet. Toss the florets with half of the olive oil, salt, and pepper and roast until tender, about 30 minutes.
Cook the Mad Dog 357 Original Hot Sauce with the capers in the remaining olive oil in a hot skillet for 1 minute. Add the wine and then cook until the mix has reduced by half, about a minute. Then, stir in the butter and season with salt and pepper to taste. Then, add the cauliflower and toss to coat.
