Looking for a super special way to celebrate Christmas this year?
This is just the feast that you’re looking for. It’s got plenty of flair and plenty of heat. Who doesn’t love the idea of an old-fashioned holiday hen? Especially if you’ve doused with some Scorpion Hot Sauce to bring the temperature right up to your fiery standards.
Now, if you can’t get your hands on hens, you may want to halve the numbers and go for good old chickens. Isn’t it time to give those turkeys a rest? It’s certainly a lot less work – just take a look.
The one thing you don’t want to skip is the Scorpion Hot Sauce and the sherry – together they’re quite the pair.
And a super terrific way to make everyone feel warm and fuzzy from head to toe…
Ingredients 4 teaspoons butter, melted
2 teaspoons Lemon juice
1 teaspoon Worcestershire sauce
6 fresh Cornish hens (about 1½ pounds each)
Salt and pepper
6 sprigs Rosemary
3 tablespoons all-purpose flour
1½ cups Chicken broth
1-3 teaspoons Mad Dog 357 Scorpion Hot Sauce
½ cup Dry sherry
Salt and pepper
Preparation
Preheat your oven to 350°F. Line a large, shallow roasting pan with baking paper.
Combine the butter, lemon juice, and Worcestershire sauce in a small bowl and brush it all over the hens, then sprinkle with salt and pepper and place in the roasting pan with the rosemary. Place in the oven and roast for about an hour (perhaps a little longer) until the skin is crispy and golden brown.
Place the hens on a serving dish and cover with foil to keep warm.
Place the roasting pan on the stove over medium-low heat and stir the flour into the pan drippings. Cook, stirring constantly, for 4 to 5 minutes – until the flour is a deep golden brown. Gradually whisk in the Mad Dog 357 Scorpion Hot Sauce with the chicken broth and sherry. Continue to cook until gravy is smooth and thickened. Season to taste and serve on the side of the hens.
