Beef, cheese, hot sauce. There’s nothing better, is there?

Okay, we know there are a few things better, but this isn’t the forum to discuss them, is it?

Now, we know your local sandwich shop can hook you up with a good meatball sub. But this one isn’t just good – it’s amazing… truly delicious. And, it’s simple to make this recipe which serves four (if you’re generous enough to share). You can have it on the table in half an hour or less.

The meatballs alone would be enough to satisfy your craving – well there would be if you added a few drops of Mad Dog hot sauce. But, it’s really all about the sauce with this sandwich. Full of tomatoey richness, it’s the Scorpion hot sauce added to the mix that makes all the difference. It’s the right amount of bite blended with classic Italian flavors.

If you really want to up your game, spread a few drops of the hot sauce on the inside of the French bread, scatter over a little cheese, and broil it for a moment or two before adding the meatballs and the sauce – and plenty more cheese. Wow, we’re getting hungry now.

Ingredients

For the meatballs
1½ pounds Ground beef
1 large Egg, beaten
1 cup Italian bread crumbs
1 medium Onion, finely chopped
4 cloves Garlic, minced
2 teaspoons Worcestershire sauce
¼ cup Parsley leaves, chopped
¼ cup Parmesan, grated
Salt and black pepper, to taste
For the Mad Dog marinara sauce
2 tablespoons Olive oil
4 cloves Garlic, chopped scorpion pepper hot sauce
2-3 teaspoons Mad Dog 357 Scorpion
handful parsley leaves, chopped
½ teaspoon Dried oregano
1 can (28-oz) crushed tomatoes
1 can (14-oz) Chunky-style crushed Tomatoes
Salt and black pepper, to taste French bread, to serve Shredded mozzarella, to serve

Preparation


Preheat your oven to 450ºF. Line a baking sheet with baking paper or foil and set aside.

Combine all the ingredients for the meatballs in a mixing bowl, but don’t over mix. Divide into 16 portions and roll into meatballs. Place on the lined baking sheet and roast in the oven for about 12 minutes – until cooked through.

Meanwhile, make the sauce by heating the oil in a saucepan over medium heat. Add the garlic and cook for 30 seconds, then add the Mad Dog 357 Scorpion and the herbs. Cook for another minute, then add the tomatoes, and season with salt and pepper. Allow the sauce to a bubble, then reduce the heat and simmer on low until the meatballs are ready.

When meatballs are cooked, roll in the sauce and then spoon into the sub rolls, topping with the cheese (and maybe placing under the broiler to melt).
