Serves: 4-6
You’ll need:

6 baking potatoes (about 3 pounds), scrubbed and pricked with a fork
extra-virgin olive oil
Mad Dog 357 Yellow Cake Powder
kosher salt
1 cup grated cheddar cheese
6 strips bacon, cooked and crumbed
½ cup sour cream
2 green onions, thinly sliced
Oven preheated to 400°F

Preparation

Rub the potatoes with a little olive oil, place on a broiler pan and bake in the pre-heated oven for 1 hour. Remove from the oven, cut in half lengthwise and allow to cool slightly. Scoop out most of the flesh, leaving a border of ¼” all the way around.

Increase the oven temperature to 450°F.

Brush the potatoes all over with olive oil. Sprinkle over a little Mad Dog 357 Yellow Cake Powder along with the salt. Place halves on the broiler pan and return to the oven. Bake for 10 minutes on one side, then flip skin and bake for another 10 minutes.

Remove from the oven. With skin sides down, sprinkle over the cheese and bacon. Return to the oven and cook for another 2-4 minutes, until the cheese is melty and bubbly. Remove from the oven. Top with sour cream and green onions. Serve hot with your favorite Mad Dog hot sauce on the side.
