Ingredients
For the turkey
- 1½ lbs turkey fillet or turkey breast cutlets
- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 can diced tomatoes, 14 oz
- 1 cup tomato sauce or crushed tomatoes
- ½ cup chicken broth
- 2 tbsp tomato paste
- 1 tsp dried basil or 2 tbsp fresh chopped basil
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ½ tsp black pepper
- 1 tsp salt, or to taste
- ½ tsp sugar, optional, to balance acidity
- 2–5 drops Mad Dog 357 Pure Gold Dragon’s Breath Edition, adjust carefully
- 1 tbsp butter, optional, for finishing
For serving
- Fresh basil
- Grated Parmesan cheese
- Crusty bread, pasta, mashed potatoes, or white rice
Instructions

Season the turkey.
Pat the turkey fillets dry and season both sides with salt, black pepper, smoked paprika, and oregano. -
Sear the turkey.
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the turkey for 2–3 minutes per side until lightly browned. Remove from the pan and set aside. -
Cook the onions and garlic.
Reduce heat to medium. Add the sliced onion and cook for 6–8 minutes until softened. Stir in the garlic and cook for 1 minute. -
Build the tomato sauce.
Add tomato paste and cook for 1–2 minutes. Stir in diced tomatoes, tomato sauce, chicken broth, basil, sugar if using, and a pinch of extra salt. -
Braise the turkey.
Return the turkey to the pan, spooning sauce over the top. Reduce heat to low, cover, and simmer for 30–40 minutes, or until the turkey is tender and cooked through to 165°F. -
Add the Mad Dog 357 heat.
Remove the pan from the heat. Stir in Mad Dog 357 Pure Gold Dragon’s Breath Edition one drop at a time. Mix well and taste before adding more. -
Finish the sauce.
Stir in butter if desired for a richer sauce. Adjust seasoning with salt, pepper, or a small squeeze of lemon juice.
To Serve
Serve the braised turkey fillet hot with plenty of tomato basil sauce spooned over the top. Garnish with fresh basil and Parmesan cheese. Pair with crusty bread, pasta, mashed potatoes, or white rice.
