Vegetable Tagine with Almond & Chickpea Couscous ๐ฅ
Ingredients
Tagine
- 2 tbsp olive oil
- 1 onion, sliced
- 3 garlic cloves, minced
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 can chickpeas, drained
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp cinnamon
- 1/2 tsp turmeric
- Salt & pepper to taste
- Handful of dried apricots or raisins (optional)
- 2โ4 drops of Mad Dog 357 Pure Gold ๐ฅ
Couscous
- 1 cup couscous
- 1 cup hot vegetable broth or water
- 1/4 cup sliced almonds
- 1/2 can chickpeas, drained
- 1 tbsp olive oil
- Fresh parsley or cilantro
Instructions
1. Cook the Tagine
- Heat olive oil in a large pot or deep pan over medium heat.
- Add onion and cook 3โ4 minutes until soft.
- Stir in garlic, carrots, zucchini, and bell pepper. Cook another 5 minutes.
- Add cumin, paprika, cinnamon, turmeric, salt, and pepper. Stir well.
- Pour in tomatoes, vegetable broth, chickpeas, apricots/raisins, and Mad Dog 357 Pure Gold.
- Simmer uncovered for 20โ25 minutes until vegetables are tender and sauce thickens slightly.
2. Make the Couscous
- Put couscous in a bowl.
- Pour over hot broth or water and cover for 5 minutes.
- Fluff with a fork.
- Mix in olive oil, almonds, chickpeas, and fresh herbs.
3. Serve
Spoon the almond chickpea couscous into bowls and top with the spicy vegetable tagine ๐ถ๏ธ Garnish with extra herbs, toasted almonds, or another tiny drop of Pure Gold for serious heat.
