Vegetable Tagine with Almond & Chickpea Couscous 🔥
Ingredients
Tagine
- 2 tbsp olive oil
- 1 onion, sliced
- 3 garlic cloves, minced
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 can chickpeas, drained
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp cinnamon
- 1/2 tsp turmeric
- Salt & pepper to taste
- Handful of dried apricots or raisins (optional)
- 2–4 drops of Mad Dog 357 Pure Gold 🔥
Couscous
- 1 cup couscous
- 1 cup hot vegetable broth or water
- 1/4 cup sliced almonds
- 1/2 can chickpeas, drained
- 1 tbsp olive oil
- Fresh parsley or cilantro
Instructions
1. Cook the Tagine
- Heat olive oil in a large pot or deep pan over medium heat.
- Add onion and cook 3–4 minutes until soft.
- Stir in garlic, carrots, zucchini, and bell pepper. Cook another 5 minutes.
- Add cumin, paprika, cinnamon, turmeric, salt, and pepper. Stir well.
- Pour in tomatoes, vegetable broth, chickpeas, apricots/raisins, and Mad Dog 357 Pure Gold.
- Simmer uncovered for 20–25 minutes until vegetables are tender and sauce thickens slightly.
2. Make the Couscous
- Put couscous in a bowl.
- Pour over hot broth or water and cover for 5 minutes.
- Fluff with a fork.
- Mix in olive oil, almonds, chickpeas, and fresh herbs.
3. Serve
Spoon the almond chickpea couscous into bowls and top with the spicy vegetable tagine 🌶️ Garnish with extra herbs, toasted almonds, or another tiny drop of Pure Gold for serious heat.
