Vegetable Tagine with Almond & Chickpea Couscous ๐Ÿ”ฅ

Ingredients

Tagine

  • 2 tbsp olive oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 can chickpeas, drained
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp cinnamon
  • 1/2 tsp turmeric
  • Salt & pepper to taste
  • Handful of dried apricots or raisins (optional)
  • 2โ€“4 drops of Mad Dog 357 Pure Gold ๐Ÿ”ฅ

Couscous

  • 1 cup couscous
  • 1 cup hot vegetable broth or water
  • 1/4 cup sliced almonds
  • 1/2 can chickpeas, drained
  • 1 tbsp olive oil
  • Fresh parsley or cilantro

Instructions

1. Cook the Tagine

  1. Heat olive oil in a large pot or deep pan over medium heat.
  2. Add onion and cook 3โ€“4 minutes until soft.
  3. Stir in garlic, carrots, zucchini, and bell pepper. Cook another 5 minutes.
  4. Add cumin, paprika, cinnamon, turmeric, salt, and pepper. Stir well.
  5. Pour in tomatoes, vegetable broth, chickpeas, apricots/raisins, and Mad Dog 357 Pure Gold.
  6. Simmer uncovered for 20โ€“25 minutes until vegetables are tender and sauce thickens slightly.

2. Make the Couscous

  1. Put couscous in a bowl.
  2. Pour over hot broth or water and cover for 5 minutes.
  3. Fluff with a fork.
  4. Mix in olive oil, almonds, chickpeas, and fresh herbs.

3. Serve

Spoon the almond chickpea couscous into bowls and top with the spicy vegetable tagine ๐ŸŒถ๏ธ Garnish with extra herbs, toasted almonds, or another tiny drop of Pure Gold for serious heat.
