Ingredients
For the stew
- 2 tbsp olive oil
- 1½ lbs boneless, skinless chicken thighs or chicken breast, cut into bite-size pieces
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1 cup dried brown or green lentils, rinsed
- 2 tbsp tomato paste
- 1 can diced tomatoes, 14 oz
- 1½ cups crushed tomatoes or tomato sauce
- 4 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp smoked paprika
- ½ tsp crushed red pepper flakes, optional
- 1 tsp salt, plus more to taste
- ½ tsp black pepper
- 1–2 tsp Mad Dog 357 Gold Edition Hot Sauce, adjust carefully
- 1 tbsp lemon juice or red wine vinegar
- 2 tbsp chopped fresh parsley or basil

- Crusty bread
- Grated Parmesan cheese
- Fresh basil or parsley

Instructions

Brown the chicken.
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and season lightly with salt and black pepper. Cook for 4–5 minutes until lightly browned. Remove and set aside. -
Cook the aromatics.
In the same pot, add the onion and cook for 5 minutes until softened. Stir in the garlic and cook for 1 minute. -
Build the arrabbiata base.
Stir in the tomato paste and cook for 2 minutes. Add the diced tomatoes, crushed tomatoes, chicken broth, oregano, basil, smoked paprika, red pepper flakes if using, salt, and black pepper. -
Add lentils and potatoes.
Stir in the rinsed lentils and diced potatoes. Return the browned chicken to the pot. -
Simmer the stew.
Bring to a gentle boil, then reduce heat to low. Cover partially and simmer for 40–50 minutes, stirring occasionally, until the lentils are tender, the potatoes are soft, and the chicken is fully cooked. -
Add the Mad Dog heat.
Stir in Mad Dog 357 Gold Edition Hot Sauce a little at a time. Start with 1 teaspoon, taste, then increase if you want more heat. -
Finish the stew.
Stir in lemon juice or red wine vinegar to brighten the sauce. Taste and adjust with more salt, pepper, or hot sauce as needed.
To Serve
Ladle the stew into bowls and top with fresh parsley or basil, grated Parmesan, and an optional extra dash of Mad Dog 357 Gold Edition Hot Sauce. Serve with crusty bread for dipping.
