Extra Hot Wing Sauce: A Game-Day Heat Ladder

Buffalo sauce is two ingredients: melted butter and hot sauce. Swap the hot sauce and you control the heat. Our ladder starts at 357,000 Scoville and climbs past 1 million, so pick your rung, make the sauce below, and toss. When the ladder runs out, one drop of Revenge takes the whole batch past it.

  • The ratio: 4 tbsp butter to 2 tbsp of any sauce below for 2 lb of wings. Taste, then add more.
  • Past 1 million: one drop of Revenge habanero extract in the butter, for the whole batch.
  • Toss hot, toss last. Crisp wings straight from the oven or fryer, sauced right before serving.
  • Running a wing flight? Sauce each heat level in its own bowl and label it.

The heat ladder

For scale, a jalapeño runs about 5,000 Scoville. Every sauce below is at least 70 times that.

Sauce Scoville vs. a jalapeño What it brings to wings
Mad Dog 357 Hot Sauce (The Original) 357,000 71× Cayenne, habanero, garlic and onion, boosted with 3 million Scoville extract. The entry rung.
Mad Dog 357 Collector's Edition 600,000 120× The same base, built on 6 million Scoville extract.
Mad Dog 357 Silver Edition 750,000 150× Habanero and cayenne base, a big step up in heat.
Mad Dog 357 Gold Edition 1,000,000 200× Original Mad Dog flavor with Plutonium No. 9 extract.
Pure Gold, Dragon's Breath Edition 1,000,000+ 200×+ Mango and peach with Carolina Reaper. Sweet first, then the heat.

Want a sauce that clings instead of runs? Reaper Sriracha is thick enough to toss on its own, no butter needed. Carolina Reaper behind a garlicky sriracha base.

Mad Dog Buffalo wings

Wings (2 lb)

  1. Dry them. Pat 2 lb of wings dry with paper towels. Dry skin is crisp skin.
  2. Season. Toss with 1 tbsp aluminum-free baking powder and 1 tsp salt.
  3. Cook. Bake on a rack at 425°F for 40–50 minutes, flipping halfway. Or air fry at 380°F for 22–25 minutes, shaking halfway. They're done when crisp and at least 165°F inside.

Sauce

  • 4 tbsp unsalted butter
  • 2 tbsp of any sauce on the ladder (the Original if you're not sure)
  • Optional: 1 drop of Revenge extract, whisked into the melted butter first
  • 1 tsp honey (optional, rounds out the vinegar)
  • Pinch of salt

Melt the butter over low heat. Whisk in the sauce, honey and salt until smooth. Keep it below a simmer so the butter doesn't break. Taste on a single wing, adjust, then toss everything right before serving.

Going past 1 million: add Revenge

When the top of the ladder isn't enough, add extract to the butter before the sauce goes in. Butter carries capsaicin well, so the heat spreads evenly instead of landing on one wing. Our pick for wings is Mad Dog 357 Revenge: 1,000,000 Scoville of habanero and chile pepper extract, and habanero heat is bright and fast, right at home in Buffalo sauce. Warm the bottle in hot water so it pours, then add one drop for the whole batch, whisk, wait a minute, and taste. Our guide to cooking with pepper extract has the full dosing chart.

Extract is a food additive, not a sauce. Never put it straight on a wing or set it out on the table.

Game-day setup: run a wing flight

Most of the crowd wants hot. A few want the real thing. Give everyone a lane:

  1. Pick three rungs. The Original, Silver Edition and Gold Edition cover 357,000 to 1 million Scoville.
  2. Add a Revenge bowl for the ones who say it’s still not hot: Gold Edition sauce, plus one drop of Revenge in the butter.
  3. Sauce each batch in its own bowl with its own tongs, so the heat stays where you put it.
  4. Label the platters with the sauce and the Scoville number.
  5. Put dairy on the side. Blue cheese or ranch cuts the burn better than water.

Pick your rung

Wing regulars, start with the Original at 357,000. Want more? Silver Edition at 750,000. Gold Edition is for anyone who says nothing is ever hot enough, and Revenge is for when they say it about Gold. Nothing mild here.
